  • 4 tablespoons sugar (60 g)
  • 1 cup powdered sugar (120 g)
  • 3 egg whites
  • 1/2 tablespoon ground cinnamon (8 g)
  • 1/2 tablespoon freshly squeezed lemon juice (8 ml)
  • 1 tablespoon butter (20 g)
  • 1 tablespoon wheat flour (15 g)

Method of preparation

  • Put the ground almonds, cinnamon and powdered sugar in a medium-sized bowl and mix.
  • Then lightly add an egg white and lemon juice. After incorporating these ingredients, mix everything with a hand mixer. The dough obtained must be sticky, but have a compact texture.
